1 cup of plant-based milk (you can use store bought or homemade)
1scoop of vanilla bean Ocean Avenue WheySmart
2 pitted dates
10-12 raw almonds
1 tsp cinnamon

Zucchini Noodle Salad

Zucchini Noodle Salad

I have become completely addicted to zucchini noodles - both for salads and for pasta.  And they are SO easy to make!  I have been having a zucchini a day lately as a foundation with my greens.  I feel so healthy!

Ingredients:

One small zucchini about 6 inches long - either use the zucchini noodle maker or just shred with a mandolin or some other tool. 
Handful of spring mix/greens
tomatoes - diced
cucumbers - diced
mushrooms - sliced
microgreens (you can get these at Trader Joe's)
Hummus for salad dressing (put in bowl and dip fork in to use as a dressing)

Why I Quit As a Beachbody Coach

For the past year I have been a huge advocate for Beachbody.  I have loved Shakeology since it was released in 2009.  I love the workouts.  I loved the energy of the company.  I loved meeting such great people and getting trained.  And then...they changed the formula.  Last summer they messed with chocolate Shakeology and to me it tasted like chocolate flavored windex.  Apparently, I wasn't the only person who felt that way.  A few months later they changed the formula...again.  About the same time I was introduced to Ocean Avenue.  I liked the opportunity, the incentives (trips for your whole family and not just party cruises), and especially the leadership.  I liked the fact that I could join in pre-launch, but that the compensation plan was beneficial for anyone at any level.  I also liked that Ocean Avenue Shakes had half the calories, 1 gram of sugar (instead of 9), 4 grams of carbs (instead of 17) and undenatured whey instead of whey protein isolate.  I also liked that it had a couple of superfoods (chlorella and spirulina) but didn't overwhelm my system.  And honestly - the Vanilla Bean flavor of WheySmart is just awesome.

Oh yeah, I also like the fact that it is half the price.  And since Beachbody is INCREASING the price of Shakeology by $10, I am really happy that I made the switch.  Since then, my team has grown to almost 40 people.  I have made more in commissions than the entire year I was in Beachbody, and I have lost weight.  Do I still love Beachbody workouts?  Sure.  However, I have my library built up and that is enough for me right now.

Ocean Avenue Shakes vs. Other Protein Shakes

I love protein shakes, but what I do not love is the gritty taste that comes from plant protein shakes.  What works for me is the combination of the undenatured whey protein and pea protein.  There is nothing gritty about the Ocean Avenue WheySmart Shakes.  In fact, they are the perfect flavor to mix with frozen fruit AND greens.  They are sweetened with Stevia and they don't have all of the fillers and garbage that come with other shakes.  I also love the other Ocean Avenue ProductsInvigorate has really helped with weight loss in combination with the WheySmart.  WheyBeyond is a recovery shake that is berry flavored that is really helping my husband with building lean muscle mass.  Empower is a powerful anti-inflammatory supplement that has made a huge difference with friends and family who have arthritis, knee pain, joint pain, back pain, and even Multiple Sclerosis!  And finally, Focus Energy really helps me when I need to have energy and stay focused and calm at the same time.  It has helped my mom with her essential tremor, and is FANTASTIC for staying awake without jitters or crashes on road trips.

Forget the coffee or diet coke - you need NUTRIENTS to get up and get moving in the morning.  Avocado has fantastic nutrients and is a healthy fat - think brain food.  

1 cup coconut milk
1 scoop Ocean Avenue Vanilla Bean WheySmart
1/4 cup avocado
2 Tbs. canned sweet potato or pumpkin
1/2 banana
1/2 tsp raw local honey

If you like it colder, freeze the banana the night before!

I love almonds in my smoothies, because I know I am getting some amazing nutrients as well as protein.  I have used this recipe often as a nutty treat!

1 cup of almond milk (or coconut milk)
1 scoop of Ocean Avenue Vanilla Bean OceanWhey
1/2 banana
1/2 cup of kale
1 tablespoon of almond butter, or a small handful of raw almonds
1/8 tsp. of cinnamon
1/8 tsp. of nutmeg
1/8 tsp. of ground ginger

Cherry Pie and Vanilla Ice Cream Smoothie


Okay - might be a tiny stretch, but this is good stuff.  

1 cup filtered water
1 cup coconut or almond milk
1 cup frozen dark pitted cherries
1 scoop Vanilla Bean WheySmart
1 banana (optional)
If you want to add a handful of spinach to get some greens in, that works.  However, the Ocean Avenue WheySmart has the supergreens spirulina and chlorella.

Blend!

Cherries have some powerful anti-oxidants and are anti-inflammatory.

A friend of mine sent me 100 shake recipes!  I am going to go through them and put them on this website based on the ones that I like the best.  Since I always have friends asking me for recipes, I am excited to have new ones to try out.  

Ocean Avenue Shake Recipe: After Glow Smoothie

1/2 cup pomegranate juice
1/2 cup orange juice
1 scoop of WheySmart or WheyBeyond (berry flavor)
1 cup frozen pineapple
1/2 cup ice

Blend in a Vitamix and enjoy!
4 oz. (1/2 cup) pomegranate juice, 4 oz. (1/2 cup orange juice), 2
scoops Vi-Shape shake mix, 1 cup frozen pineapple & 5 ice cubes. Blend well
in blender.

4 bars
Ingredients:
• 1 scoop Chocolate Shakeology
• 1 scoop Ocean Avenue WheySmart
• ½ cup natural peanut butter
• ½ banana
• ½ cup rolled oats

  

Preparation:

1. Mix all ingredients together.
2. Freeze for at least 90 minutes in an 8" x 8" pan.
4. Remove from freezer, cut into 4 squares.

Ocean Avenue Shakes and Supplements are now available, and I am going to be sharing some of the recipes that I come up with!  I loved this one.  It was very simple and is around 200 calories. 

WheySmart Banana Blueberry
1 1/2 cups of filtered water
1 banana
1/2 cup frozen blueberries

Blend really well!  I use a Vitamix.  

Carly's Spaghetti Sauce Recipes

Today I told my sister I needed a recipe for spaghetti sauce that uses canned diced tomatoes.  We found (ahem) several in our food storage room today.  This is what she sent me!
 
 
Recipe One:
1 large bunch of fresh basil, 2 cups canned diced tomatoes, drained, 5 coves of garlic, peeled and chopped fine, 5 tbs olive oil, salt, and pepper to taste
(this goes with 1 lb spaghetti)
 
prepare the basil by washing it and pulling the leaves off, drying, and tearing the leaves in half
 
put tomatoes, garlic, olive oil, salt, and pepper in a a saucepan (don;t use a pot, sauces cook by reduction and reduce better in a shallower pan) and turn the heat to medium high
 
cook for 20 to 25 mins or until the oil floats free from the tomato. taste and correct for salt

off heat, as soon as sauce is done, mix in torn up basil, setting aside a few pieces for adding after the sauce has been tossed with the pasta
 
(always toss sauce and pasta and add a little oil to the pasta when you toss it with sauce)

Recipe Two: 
1 can crushed tomatoes, 1 can diced tomatoes, 5 tbs butter , and one onion cut in half
you put it all in a pan together and cook it very slow for 45 mins or until the fat floats free from the tomatoes
 
while you are cooking it, be sure to stir the onions around so they don't burn

again, cook in a shallower pan
 
when it's done (really 45 mins is the best time) discard the onions and mix with spaghetti or gnocchi, with a little more butter and be sure to taste it and salt it

Blueberry Avocado Smoothie
  • 1 scoop Greenberry or Tropical Strawberry Shakeology
  • 1 cup frozen organic blueberries
  • Small piece of avocado—about 1/5 of a large avocado or 1/4 of a small one
  • 1 cup coconut water, or 1/2 cup filtered water and 1/2 cup unsweetened almond milk
  • Juice of half a lime
  • 4 ice cubes
  • 1 tsp. raw honey
Add all ingredients to blender and pulse until smooth and creamy.

"Groatmeal" from Rawfully Tempting





I was very intrigued by this recipe, not only because I love sprouting stuff, but because I already eat steel cut oats on a daily basis.  

Ingredients:
1 - 2 cups of whole oat groats, "naked oats, or hulless oats, soaked overnight.
1/4 cup almonds, soaked, 2 hours
1 - Tbsp chia seeds
Topping Suggestions: Raisins, coconut, apples, bananas, berries, slivered almonds, etc.

Directions:
Rinse and drain oats and almonds thoroughly. Gently pulse in food processor.

Transfer to a bowl. Add chia seeds, pinch of sea salt, raisins, shredded coconut, chopped apples, or whichever toppings you like. Sweeten with honey or maple syrup and/or sprinkle with cinnamon. In the winter, you may like to warm this in the dehydrator for a bit.

Pour in some fresh nut milk  ENJOY!

Spring Vegetable Soup

Ingredients

1 tbsp (15 ml) of vegan butter (Earth Balance soy free is best)
2 shallots, chopped
1/4 cup (50 ml) of basmati rice (I used organic brown basmati rice)
5 cups (1.25 ml) vegetable stock
1/2 tsp (2 ml) of salt
2 cups (500 ml) baby spinach
1 cup (250 ml) green peas (fresh or frozen)
1 head of boston or butter lettuce (can also use romaine)
1 green onion, chopped
2 tbps (30 ml) fresh mint, divided
4 tbps (60 ml) plain greek yogurt 

Directions

In a large pot, melt butter over medium heat. Add shallots and cook, stirring gently, until softened but not browned (about 4 min)

Add rice and stir for 1 minute. Add stock and salt and bring to a boil. Reduce heat and simmer, partially covered, until the rice is tender. 10-12 minutes.

Stir in spinach, peas, lettuce and green onion and simmer until vegetables are wilted and soft, 2-3 minutes.

Remove from heat and let cool for a few minutes. In a blender, puree the soup in small batches until smooth. Return to pot and stir in 1 tbps of the mint. Reheat over medium heat until steaming. Adjust seasoning as needed.

Serve in warmed bowls and garnish with greek yogurt and remaining mint.

Makes 4 servings.

Chocolate Muffins with Zucchini


I made these this morning and adapted them from the Happy Herbivore's version. 

Ingredients

¼ cup unsweetened cocoa
1¼ tsp baking powder
¾ tsp baking soda
½ tsp salt
1 tsp cinnamon
2 T ground flax seed mixed with 6 T water - mix and then set aside
½ cup raw sugar (I used organic evaporated cane juice)
½ cup unsweetened applesauce
¼ rice milk cup 
1 tsp vanilla extract
1 cup shredded zucchini

Instructions

Preheat oven to 350F. 

Spray paper or silicone liners with non-stick spray.

Whisk flour, cocoa, baking powder, baking soda, salt and cinnamon together. 

In another bowl, mix the ground flax seed mix with applesauce and sugar. Add in rice milk , vanilla, and zucchini. Stir until evenly combined. Add flour mix to wet mix and stir until just combined. Spoon batter into greased muffin pan and bake 18-20 minutes. 

These muffins can be frozen.

The Second Best Pumpkin Muffins

This recipe is adapted from The Best Pumpkin Muffins by Post Punk Kitchen.  That is why they are the second best and not THE best!


1 3/4 cups all-purpose flour (I did half organic white and half wheat)
1 1/4 cups sugar (I used organic evaporated cane juice)
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground or freshly grated nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 cup pureed pumpkin (Fresh or from a can; do not use     pumpkin pie mix)
1/2 cup soy milk
1/2 cup vegetable oil
2 tablespoons molasses

Preheat oven to 400°F. Lightly grease a twelve-muffin tin.  Makes about 18.

Sift together flour, sugar, baking powder, salt, and spices. In a separate bowl, whisk together pumpkin, soy milk, oil, and molasses. Pour the wet ingredients into the dry and mix.

Fill the muffin cups two-thirds full. Bake for 18 to 20 minutes, until a toothpick or knife inserted in the center comes out clean.

Banana Chocolate Chip Millet Muffins

Originally found in the cookbook Peas and Thank You by Sarah Matheny (but adapted a bit)





Ingredients:  
2/3 cups millet
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 bananas, mashed
2 Tbsp olive oil
1 tsp vanilla extract
1/2 cup dark chocolate chips (preferably dairy free)

Directions:
Preheat oven to 375 degrees.  Line a muffin tin with silicone muffin cups if you have them, or paper if you don't.

Place millet into a food processor, spice mill, or high-speed blender.  I used a coffee grinder, though I have no idea why we have one since we don't drink coffee.  Pulse into fine texture.

Pour into a large bowl and then add the pastry flour, baking powder, baking soda, salt, and cinnamon.

In a smaller bowl, combine the mashed bananas, brown sugar, oil, milk, and vanilla.

Add the wet ingredients into the dry and then stir until just combined.  Then add the chocolate chips.  I use the dairy, nut, and soy free Good Life Chocolate Chips.

Spoon batter into muffin cups.  Bake for 17-19 minutes.  Cool on a wire rack and enjoy!  Makes about 18.

Shakeology with a Twist!


Today I tried a new chocolate shakeology recipe and added a bit of a twist.  It was surprisingly refreshing and perfect for me for summer!  

1 1/2 cups filtered water
1 1/2 cups chopped celery
3/4 cups frozen pineapple

Blend really well - enjoy!  It makes a lot, so you could split it into two snacks, mid-morning and afternoon!

Apple Cider Vinegar Salad Dressing

Apple Cider Vinegar Salad Dressing
 
1 cup of olive oil
1/2 cup of Apple cider vinegar
1 teaspoon of onion powder
2 tablespoon of whole grain mustard or dijon type mustard
2-3 cloves of garlic minced
1/2 teaspoon of dried thyme
1/2 teaspoon of dried  basil
1 teaspoon salt

I don’t sweeten this at all, but for those not used to the bite of a vinegar dressing, you might need to. 

To sweeten, add:

A pinch of Stevia, or 2-4 teaspoons of sugar or natural sweetener
Combine all ingredients and mix well before using.
