Spring Vegetable Soup

Ingredients

1 tbsp (15 ml) of vegan butter (Earth Balance soy free is best)
2 shallots, chopped
1/4 cup (50 ml) of basmati rice (I used organic brown basmati rice)
5 cups (1.25 ml) vegetable stock
1/2 tsp (2 ml) of salt
2 cups (500 ml) baby spinach
1 cup (250 ml) green peas (fresh or frozen)
1 head of boston or butter lettuce (can also use romaine)
1 green onion, chopped
2 tbps (30 ml) fresh mint, divided
4 tbps (60 ml) plain greek yogurt 

Directions

In a large pot, melt butter over medium heat. Add shallots and cook, stirring gently, until softened but not browned (about 4 min)

Add rice and stir for 1 minute. Add stock and salt and bring to a boil. Reduce heat and simmer, partially covered, until the rice is tender. 10-12 minutes.

Stir in spinach, peas, lettuce and green onion and simmer until vegetables are wilted and soft, 2-3 minutes.

Remove from heat and let cool for a few minutes. In a blender, puree the soup in small batches until smooth. Return to pot and stir in 1 tbps of the mint. Reheat over medium heat until steaming. Adjust seasoning as needed.

Serve in warmed bowls and garnish with greek yogurt and remaining mint.

Makes 4 servings.

Super Simple Sandwich

Today I went for super simple.  I loved it!  I got the 9 grain bread from Bountiful Baskets, but you could really use any whole grain bread that you prefer.

2 slices whole grain bread
hummus
spring mix lettuce 
thinly sliced tomato
sliced avocado

Spread hummus on each slice of bread.  
Then add as much of the spring mix as you would like.
Add tomato slices and avocado slices.

Eat!

It's Easy Being Green Smoothie

Another recipe from Dr. Oz

Ingredients
4 cups of your favorite leafy greens, such as kale, spinach, collard greens
2 tbsp hempseeds and/or flaxseeds
1 cup frozen blueberries
1/4 cup frozen cherries
1/4 cup frozen raspberries
1/4 cup frozen pineapple pieces
1/4 cup frozen mango chunks
1 medium frozen peeled banana, broken into pieces
2 cups unsweetened almond milk

Directions 
In a high-powered blender, combine greens, hempseeds, blueberries, cherries, raspberries, pineapple, mango, banana and almond milk.

Blend on high speed for 60 seconds or until smooth. Enjoy icy cold.

Green Smoothie Recipe - Gorilla Juice

Gorilla Juice
3-4 cups of filtered water
1-2 drops of lemon oil
2 bananas
2-3 cups of mixed greens - kale, spinach, beet greens, swiss chard in this case
3/4 cup frozen blueberries
Either liquid stevia or stevia packets to sweeten (do not use sugar or other artificial sweeteners)

Blend away!  If you want to add ice, feel free.  I tend to like mine a juice-like consistency and my kids seem to drink it better if it is that way as well.
